Lobster Newburg

1 1/2 c Lobster meat
1/2 c Butter
1/3 c All purpose flour
1/4 ts Salt
1 c Milk
2 Egg yolks beaten
2 tb Dry sherry
3/4 c Water
Hot rice


In large saucepan over medium heat melt butter whisk in butter and salt until mixture is smooth. Combine water milk and egg yolks and gradually add to flour mixture in saucepan stirring constantly over medium heat until thickened. Cut lobster meat into bite sized pieces and add to saucepan. Simmer until lobster is hot. Remove from heat. Stir in sherry. Serve over hot rice or toast points.
