New England Clam Chowder

3 medium all-purpose potatoes -- diced
1 medium onion -- chopped
3 cups milk, 2% lowfat
1 tablespoon butter


Place potatoes and onions in a saucepan and 2 cups of water and boil for 20 minutes. Add butter and clams in their juice. Simmer 10 minutes. Add milk, salt and pepper to taste. Reheat and serve with oyster crackers.

Serve 4 to 6
