1/2 c. water
1/2 c. white wine
Equal quantities of chopped tomatoes, onion, and green peppers
Grated cheese (Swiss is recommended)
Butter or margarine
Garlic
Parsley
Clean mussels and steam in water and wine for about 10 minutes or until they open. Discard top half shell on each mussel. Melt some butter with garlic, parsley, salt and pepper and add a little stock from the steamed mussels. Stuff mussels on the half-shell with mixed chopped vegetables; then sprinkle cheese on top. Pour on butter mixture and put under broiler for 1 minute or until cheese melts.
