1 cup chopped onions
2 cups Crawfish fat
1/2 cup chopped bell pepper
1/2 cup green onions
1/2 cup chopped parsley
2 lbs. Crawfish tail
1/2 tsp. black pepper
1/2 tsp. red pepper
Salt to taste
2 1/2 cups cracker crumbs
1 egg, beaten
1 cup mushrooms
Heat butter in skillet. Add onions; saute 5 minutes. Add Crawfish fat; cook 10 minutes. Add bell pepper, green onion and Crawfish tail; cook 5 minutes. Add seasoning and parsley. Remove from heat. Add cracker crumbs and egg. Stir well. Pour in buttered casserole dish. Add cracker crumbs on top. Garnish with mushrooms. Bake 300 degrees F for 25 minutes.
