Crawfish Au Gratin

1/2 pound green onions -- chopped
3 celery ribs -- chopped
1/2 pound butter
4 tablespoons flour
1 large can evaporated milk
1 small can evaporated milk
2 pounds crawfish tails
2 egg yolks
2 tablespoons sherry
salt and pepper -- to taste
10 ounces yellow cheese -- grated
1/2 cup parmesan cheese


Saut onions and celery in butter until soft. Add flour and blend. Add milk. Remove from heat and add remaining ingredients except cheese.

Pour into casserole dish. Top with yellow cheese and sprinkle Parmesan cheese over top. Bake at 350F for 15 minutes or until done.
