Boiled Crawfish

12 to 15 lb. live crawfish
1 pkg. (3 oz.) crab and shrimp boil mix
1 c. salt
2 tbsp. cayenne pepper

In a 10 gallon stew pot, bring water, crab boil, salt and pepper to a boil. Add crawfish and boil for 10 minutes. Remove from heat and let crawfish soak for 10 minutes. This allows meat to absorb flavors, so do not shorten soaking time. Drain and serve immediately. Makes 4 to 6 servings.
