Baked Clam Loaf

1/4 pound butter
1/4 cup olive oil
1 cup chopped onion
1 1/2 teaspoons chopped fresh parsley
1 1/2 teaspoons oregano
1 dashes Tabasco sauce
1 tablespoon fresh lemon juice
3 cloves garlic -- minced
1/8 teaspoon pepper
3 6 oz cans minced clams
2 cups seasoned bread crumbs
1 cup grated parmesan cheese

Sauté onions and garlic in butter and oil until soft but not brown. Add all the seasonings and mix well. Add clams and mix. Add bread crumbs and mix well.

Pack into 2 small mini loaf pans. Sprinkle liberally with Parmesan cheese. Bake uncovered at 350F for 20 minutes.

Unmold onto serving plate and serve warm. Spread on crackers. This freezes well.
