Sizzling Prawns with Ginger

3 T Peanut oil
1 lb Medium-sized prawns, peeled and tails removed
1 lg Red bell pepper, cut in julienne
Ginger root 4" long, peeled and finely chopped
4 cl Garlic, thinly sliced
1 ts Chinese hot chili paste
2 T Dry sherry
1 sm Bunch green onions, trimmed, cut in1-inch pieces
1/4 c Soy sauce
3/4 c Toasted peanuts
3/4 c Chopped cilantro


Heat a very large nonstick saute pan or a large wok over high heat until it is hot. Add the oil and heat until is just begins to smoke. Add the prawns, red bell pepper, ginger, garlic, chili paste, and sherry, and cook over high heat for 1 minute, stirring all the while. Add the onions, soy sauce, and peanuts and cook for 1 minute, stirring constantly. Add half of the cilantro and mix well.

Turn the prawns onto a large platter, garnish with the remaining cilantro, and serve immediately with steamed rice or noodles.
