185 g Snow peas
1 lg Mango, ripe
1 tb Vegetable oil
2 ts Ginger, fresh, grated
250 g Green prawns
1 tb Dry sherry
1 tb Soy sauce
1 ts Cornflour, level
Halve and slice the onion. Top and tail the snow peas. Peel and slice
the mango.
Heat the oil in a wok or large frying pan and stir-fry the onion and
ginger for 2-3 minutes. Add the snow peas and prawns and stir-fry for
1 minute.
Add the mongo, sherry and soy sauce; stir-fry for 1 minute while
mixing the cornflour with 1 tablespoon of water. Add the cornflour to
the pan, cooking and stirring for another 1-2 minutes until the sauce
thickens. Serve immediately, with freshly cooked rice or noodles.
