Scallop Casserole

1 lb. Scallops
1/2 cup Ritz crackers, crushed
1/2 cup Italian bread crumbs
1/2 cup melted butter
1/2 cup light cream (half and half)


Grease bottom of 6x10 oblong glass casserole.


Mix crackers and crumbs. Spread half of mix in dish. Cut up Scallops (unless small Bay Scallops) and spread over mixture. Cover Scallops with rest of crumb mix. Pour melted butter and cream over top and bake 30 minutes at 350 F.


Serves 4
