Lobster (Or Seafood) Newburg

6 Tbsp. butter
2 Tbsp. flour
3 cups Lobster Meat, cut into chunks
1/8 tsp. nutmeg
Dash paprika
1 tsp. salt (pepper to taste)
3 Tbsp. sherry
3 egg yolks
2 cups light cream


In double boiler melt butter; stir in flour. Add Lobster, nutmeg, paprika, sherry, salt and pepper. Beat egg yolks and mix into cream. Stir into other ingredients. Heat on low until mixture thickens.


Optional: Sear Lobster in a little butter before beginning.
