Baked Stuffed Lobster

2 chicken Lobsters (3/4 - 1 lb. each)
3/4 lb. Shrimp
3/4 lb. Scallops
1 cup bread crumbs (Introvigne)
1/4 lb. fresh mushrooms, chopped


Cook and peel Shrimp. Cut Lobster, remove roe, and intestinal vein.


STUFFING:
Mix Shrimp and Scallops together. (Cut into chunks first.) Add 3/4 - 1 cup bread crumbs and mushrooms. Mix together. Stuff Lobsters. Bake 350-400 F, 30-40 minutes.


(To preserve moistness cover with layers of large lettuce leaves).
