Mussel Chowder

12 Mussels, minced or chopped
1 onion, cut finely
1 cup water


White Sauce:
1 oz. butter
1 oz. flour
1 1/2 cups milk
Parsley
1 Tbsp. vinegar
1 Tbsp. white wine


Make up white sauce of butter, flour, milk, and parsley. Add vinegar and white wine. Simmer gently for 15 minutes. Serve with garlic bread, croutons, or crackers.
