Lobster a la Newburg

1 Live lobster
2 c Water
1/4 c Butter or margarine
1 c Sherry wine
1 ts Salt
1/4 ts Paprika
ds Nutmeg
4 Egg yolk; beaten
1 1/2 c Cream or evaporated milk


Pressure cook live lobster in boiling water at 15 lbs. pressure for 10 minutes. Reduce pressure with cool water. Cool lobster and cut lengthwise in halves, remove meat and break it into small pieces. Melt butter in tops of double broiler. Add lobster. Blend in sherry and seasonings. Combine egg yolks and cream. Add egg mixture to lobster slowly, stirring constantly. Cook until thick. Serve immediately in patty shells or on hot toast. Serves 4.
