Lobster Newburg

1 1/2 lb Lobster
1/4 c Butter
1/2 ts Paprika
1/2 c Sherry
4 tb Flour
2 Egg yolk
1 1/2 c Light cream
1/2 c Cheddar cheese; shredded


Steam lobster for 15 minutes or use canned lobster and heat through.

In a double boiler melt the butter. Add paprika, sherry and lobster.

After stirring, fold in flour.

Beat egg yolks with cream in a bowl then fold in the mixture from the double boiler. Stir until blended.

Add shredded cheese.

Serve in puff pastry shells or on toast with fresh steamed broccoli.
