Crawfish Beignets

2 lb Crawfish tails, whole and Chopped
2 c Bacon Mirepoix
2 c Pepper cheese, shredded
2 c Cheddar/monterey jack cheese Shredded
Buttermilk
6 Eggs
1 ts Seasoned salt


Mix first 4 ingredients together. Scoop and form triangles. Flour,
dip in batter, flour again and fry until golden. Batter is 2 cups
buttermilk, 6 eggs and 1 teaspoon seasoned salt.
