1 egg yolk, beaten
1 lb. Velveeta
2 Tbsp. flour
12 oz. Pet milk
1 lb. Crawfish Tails
3 stalks celery, chopped or processed
4-5 green onions, chopped or processed
Melt margarine or butter and saute vegetables. Sprinkle flour on vegetables and stir. Add milk and stir until blended. Remove from heat and add egg yolk. Put in Crawfish Tails. Add salt and pepper to taste. Put back on heat (medium low). Add cubed cheese and cook until melted.
